This past weekend we traveled almost five hours to spend time with my brother and his family...it was well worth the drive! The kids loved playing together, and it was nice spending time with my brother and his wife. And can I just say that my sister-in-law is an amazing cook?! She spoiled us at every meal...the first morning we woke up to these amazing crepes:
Haven't had crepes in a while? Then you need to treat yourself! Here is the recipe:
~Tara's Crepes~
Mix the following in a blender:
4 eggs
3/4 cup milk
1 tsp salt
2 tsp sugar
1 cup flour-finely milled (the brand Tara used was "Canadian Gem")
Heat nonstick 10-inch skillet over medium-high heat. Brush bottom of skillet lightly with butter. Pour about 1/4 cup of batter onto pan, and tilt pan around in a circle to coat bottom of skillet. Cook crepe until top is set and underside is lightly browned, about 1 1/2 minutes.
With heat-safe rubber spatula, loosen edge of crepe; turn. Cook until second side has browned, about 30 seconds. Slip crepe onto plate, and repeat until your little stomach is content.
An extra little treat was seeing many of my Mom's pottery she had given them throughout the years. It was wonderful seeing so many bowls and platters used at every meal...but I think my favorite were the candle-holders...there is something special about seeing and holding creations my mother made and held in her own hands at one time.

Hi Heather! Tara made us stuffed french toast the following morning...it was so good! She used the crepe filling recipe (which I forgot to post...I will do that right now!) to sandwcih between two pieces of bread for the french toast. You should give it a try! I hope "Baby" Shirley is doing well! xoxo
